Soy sauce isn't just 'soy sauce'! When you are choosing what to cook with, take the same care as you do with oils. Is the soy sauce best for cooking, or is it a seasoning? How salty is it? How complex is the flavour?

Soy sauces are made and used differently in every country. Some are salty (the light soy sauces), some are aged (used in dressings or as a dipping sauce), and some very richly coloured to give braised dishes their rich hue (dark soy sauce). Try a few and taste them before deciding which to use.
