Shirataki konnyaku noodles are often called "miracle noodles", famed for having near-zero calories, no sugar, fat or protein. They are made from the roots of the konjac plant of the taro family – which are peeled, cooked, pounded, and then pressed into konjac noodles. Shirataki, konnyaku or konjac noodles are traditional ingredients in Chinese & Japanese cooking. In China they are added to hot pots, and in Japan the konjac noodles are eaten cold in salads or simmered in donabe clay pot. The noodles come in different shapes - the flat noodles are closer to Italian tagliatelle, and the shirataki noodle 'nests' are exactly as they sound, and the whole konnyaku would be cut 'tofu-style' into cubes or batons before cooking. 

The close to zero calorie konjac noodles need very little cooking - just drain away their preserving liquid and simmer for a couple of minutes to warm through. Each packet of konjac noodles is a good portion for 1 person.
